<p><strong>Grilled Sardines with Crusty Bread</strong></p>
<p><strong>Ingredients<br />
</strong>1 Fennel Bulb<br />
4 Large Sardines, gutted and headed<br />
a few sprigs of thyme<br />
2 garlic cloves<br />

100g wild rocket<br />

<p><strong>Method</strong><br />
1. Slice the fennel as thinly as possible and set aside.<br />
2. Flatten the sardines &amp; remove backbone, open out and gut cavity. Pressdown on backbone then turn over and peel of the backbone<br />
3. Heat the grill to high, lay the sardines skin side up. season and scatter the thyme and garlic over.<br />
4. Lay the tomatoes on top. Spray with LC Olive Oil spray and grill for 4-6 mins until cooked through.<br />
5. Place crusty bread on plate and top with sardines &amp; tomatoes. Place rocket and fennel on side then spray LC olive and a squeeze of lemon juice then serve.</p>

<p><strong>Method</strong><br />
1.Heat oven to 200C/fan 180C/gas 6. For the topping, tip all the ingredients together and rub with your fingers until you have a rough pastry, then set aside in the fridge.</p>
<p>2.Peel the pears and chop into large chunks, then chop the rhubarb into finger-length batons. Tip into a large ovenproof dish and toss with the sugar and orange zest and juice. Crumble over the topping and bake for 40 mins until golden and bubbling at the sides. Leave to cool for 5 mins before spooning into bowls and serving with custard or ice cream.</p>

<p>A delicious soup served with perfect seasonal produce Jersey Royals and watercress</p>
<p><strong>For the soup</strong><br />
50g/2oz butter<br />
2 shallots, chopped<br />
2 sprigs fresh thyme<br />
450g/1lb asparagus, stalks roughly chopped, tIps set aside for the stir fry<br />
125ml/4½fl oz white wine<br />
450ml/16fl oz chicken stock (vegetarians may substitute with vegetable stock)<br />
50ml/2fl oz double cream<br />
salt and freshly ground black pepper<br />
<strong>For the stir fry</strong><br />
110g/4oz Jersey Royal potatoes, cooked and cut into cubes<br />
1 spray of <strong>L&lt;C Olive Oil Cooking Spray<br />
</strong>60g/2½oz watercress, leaves only<br />
1 small bunch fresh chives, chopped</p>
<p><strong> Method</strong></p>
<p>1. For the soup, heat a pan until hot and add the butter, shallots and thyme and cook for two minutes.<br />
2. Add the asparagus stalks, reserving the tips for the salad, and cook for one minute.<br />
3. Add the white wine, bring to the boil and cook until the liquid is reduced by half.<br />
4. Add the chicken stock and bring to the boil. Reduce the heat and simmer for 7-8 minutes, until the asparagus is just tender.<br />
5. Remove from the heat and blend with a hand blender or place into a food processor (allow to cool for 3-4 minutes) and blend until smooth.<br />
6. Return the soup to the pan over a medium heat and add the cream. Stir well and season, to taste, with salt and freshly ground black pepper.<br />
7. For the stir fry, heat a frying pan until hot and add the potatoes and <strong>L&lt;C Spray</strong> and fry for 2-3 minutes, or until beginning to colour.<br />
8. Add the reserved asparagus tips and stir-fry for 2-3 minutes, or until the asparagus is cooked through.<br />
9. Remove from the heat and add the watercress and chives. Mix well and season, to taste, with salt and freshly ground black pepper.<br />
10. To serve, divide the potato and asparagus stir fry equally among the centre of shallow soup bowls and ladle the soup around each.</p>
