<p><strong>Method</strong></p>
<ul>
<li>For the vinaigrette, place the mustard into a bowl and whisk in the vinegar, water and olive oil. Season with salt and white pepper. Use a hand blender to mix thoroughly until thickened and emulsified. Add the chopped tarragon.</li>
<li>For the salad, place the mixed leaves, herbs and shallots into a bowl and gently toss. Dress the salad lightly with the vinaigrette just before cooking the scallops.</li>
<li>For the scallops, heat <strong>L&lt;C Olive Oil Cooking </strong>Spray in a non-stick pan over a medium heat. Season the scallops with salt and freshly ground black pepper before placing into the pan sliced-side down and cook until golden-brown, about 1-2 minutes. Turn the scallops over and reduce the heat. Cook for a further 1-3 minutes, depending on their size, or until just cooked. Take care not to overcook the scallops.</li>
<li>Remove the scallops from the pan and place onto a tray lined with kitchen paper. Squeeze over the lemon juice.</li>
<li>To serve, place a little of the dressed salad onto four plates. Place the scallops on and around the salad. Finish by drizzling some of the grain mustard vinaigrette around the plate.</li>

<p><strong>Grilled Sardines with Crusty Bread</strong></p>

</strong>1 Fennel Bulb<br />

<p><strong>Method</strong><br />
1. Slice the fennel as thinly as possible and set aside.<br />
2. Flatten the sardines &amp; remove backbone, open out and gut cavity. Pressdown on backbone then turn over and peel of the backbone<br />
3. Heat the grill to high, lay the sardines skin side up. season and scatter the thyme and garlic over.<br />
4. Lay the tomatoes on top. Spray with LC Olive Oil spray and grill for 4-6 mins until cooked through.<br />
5. Place crusty bread on plate and top with sardines &amp; tomatoes. Place rocket and fennel on side then spray LC olive and a squeeze of lemon juice then serve.</p>

<p><strong>Ingredients</strong></p>
<ul>

<p><strong> Method</strong></p>
<p>1. Prick the duck all over with a fork to help release the fat. Put the herbs into its cavity.<br />
2. Heat <strong>L&lt;C olive oil Spray </strong>in a heavy based casserole and brown the duck all over. If you do this slowly, it will release all the fat, so it can run out. Ladle some of the fat out of the pot and keep aside (wonderful for roasting potatoes.)<br />
3. When nice and brown, pop it breast side down in the pot, cover with stock and simmer for 1 1/2 hours.<br />
4. When done, turn the duck over and add the lettuce which has been shredded and the peas, season and replace the lid and cook for a further 40 minutes.<br />
5. Take out the duck and carve or joint. Keep warm. Drain the peas and lettuce and put with the duck.<br />
6. If necessary, skim off any fat off the sauce, season. Mix the yolks and cream in a basin and pour over half the stock. Mix well and then pour back into the rest of the sauce. Cook gently, but DO NOT boil.<br />
7. Finally add the lemon juice and the mint and then pour over the duck and serve.</p>
