Buternut Squash, Leek and onion Soup

A tasty alternative to traditional Leek and Onion soup.
Perfect as a starter or main course to warm you up on a cold winters night.
Ingredients:
- L<C Sunflower Oil Spray
- 250g of sliced leek
- 230g of peeled and sliced butternut squash
- 1 sliced onion
- 500 ml vegetable stock
- 100 ml skimmed milk
Method:
Spray L<C Sunflower Oil into a large saucepan, add the butternut squash, leek and onion and cook over a gentle heat for 3 minutes.
Mix in the vegetable stock and bring it to the boil.
Reduce the heat and let the soup simmer for 20-25 minutes.
Pour half the soup into a blender and blend until smooth.
Pour the blended soup back into the pan and add the milk.
Make sure the soup is completely hot, then serve.
